    1. 2 lobsters, about 1 1/4 pounds each 4 tbsp mayonnaise

    3. 3 to 4 split toasted buns

    4. 1/4 tsp salt

    1. Steam or boil the lobster and chop coarsely. Combine the chopped lobster with mayonnaise, diced celery, salt, pepper and the seasoning. Set the lettuce in the buns and fill with the lobster mixture in it. Serve with French fries, chips or sliced dill pickle.

Avocado Lobster Roll Ingredients 4 hot dog buns 1 tbsp fresh lemon juice 1 small red onion, finely chopped ½ pound of cooked lobster meat 2 ripe avocados Salt & pepper Dash of hot sauce Open up the hot dog buns and slightly toast them. Cut the avocado lengthwise, twist the halves and use a knife to remove the pit. Take out the avocado from the peel with a spoon and put it in a mixing bowl. With the help of a potato masher, mash the avocados and add lemon juice and stir. This will prevent the browning of the avocados. Add the red onions and hot sauce to the mixing bowl and season with salt and pepper; mix it well. To make it more spicy, add extra hot sauce. Finally, add the lobster meat into the bowl and coat it with the avocado mixture. Place a few spoonfuls of the mixture into each bun and serve with chips or fries.

Red's Eats Lobster Rolls Ingredients 1 pound cooked lobster meat 1 tbsp chopped fresh tarragon 6 top-split hot dog rolls 1 cup diced (¼ inch) celery Orange tarragon mayonnaise 2 tbsp unsalted butter at room temperature (optional) Cut the meat into ½ inch pieces and put them in a mixing bowl. Add ¾ cup of the mayonnaise, the tarragon, celery and mix well. Toast the rolls and spread butter or the remaining mayonnaise on them. Gently place the lobster mixture in the hot dog rolls and serve with sliced dill pickle.

    4. Minced Lobster Spring Rolls Ingredients 4 lobster tails, (8 oz each)

    5. oz celery, cut in long thin strips 4 oz onion, cut in long thin strips 4 oz tomato paste 6 oz ripe tomato, cut in long thin strips 4 oz green pepper, cut in long thin strips Salt, pepper, thyme 3-4 beaten eggs 2 packs spring roll wrappers Oil Boil the lobster tails in a large pot till their color changes. Allow them to cool, split the tails and extract the meat. In a frying pan, heat the oil and saute the onions, celery and pepper until translucent. Blanch the tomatoes in the boiling water; peel and dice. Add these tomatoes and thyme to the pan and cook for three minutes. Now put the chopped lobster meat and tomato paste, mix well and cook for two minutes. Lower the heat, simmer for 10 -12 minutes and season with salt and pepper. Loosen the spring roll sheets and put one tbsp of the mixture in the center of each sheet. Moisten the edge of the roll with the beaten egg and roll up the sheet and give it a cylindrical shape. Deep-fry until the rolls turn golden brown and serve hot.
