  1. 2 boneless, skinless chicken breasts

  2. 1 package fajita or taco seasoning or homemade equivalent

  1. Trim any excess fat and cartilage from the chicken breasts and cut off the rib meat. Using kitchen scissors, cut the breasts into strips about 3/4" wide down their length and cut the rib meat in half down its length. Put taco or fajita seasoning in a medium size bowl and toss chicken strips in the seasoning until well coated. Pour 3/4 cup beer or water and into a 10-12" frying pan, add olive oil and heat on high until bubbling. Place coated chicken in the pan and cook until the bottoms and sides are off-white indicating that the bottom is cooked [about 2 minutes] and then turn all strips over in the pan to finish cooking the strips. Watch to see that the strips do not burn, they cook very quickly and by the time you have finished turning the last one, the first one turned will be about ready to take out of the pan. To assemble: On a dinner size plate, lay a burrito-size tortilla and spread 1-2 tbsp sour cream to taste. Place strips of chicken across the width of the tortilla on top of the sour cream, then spoon salsa over the chicken and top with grated cheese. Fold one side of the tortilla over the chicken and roll up. Eat immediately or microwave for 1 minute 30 seconds to melt the cheese.
