  1. plain flour 200 gms (maida)

  2. gram flour 20 gms (besan)

  3. sugar 200 gms

  4. few drops yellow colour

  5. Milk 2 tbsp

  6. ghee to deep fry

  7. a plastic easy squeeze bottle

  1. * Sieve 100 gms maida and besan together.

  2. * Make a batter using warn water.

  3. * Keep aside for 24 hours.

  4. * Add remaining maida and food colour and more warm water if required.

  5. * The batter should fall easily when poured Keep aside.(Not too thick not too thin)

  6. * Make syrup of the sugar by adding water and boiling.

  7. * Add the milk and all the scum to form while boiling.

  8. * Make one string syrup. Strain.

  9. * Fill bottle with batter.

  10. * Heat ghee well in a shallow frying pan and form jalebis in the form of concentric circles about 2 inches on the outside.

  11. * Fry till crisp, drop into hot syrup.

  12. * Drain with a perforated spoon, serve hot.
