  7. 8 tb Butter, softened

  8. 1 c Brown sugar

  9. 2 1/2 c Sifted cake flour

  10. 1/2 ts Salt

  11. 2 1/2 ts Baking powder

  12. 2 Eggs

  13. 1/3 ts Baking soda

  14. 3/4 c Buttermilk

  15. 1 t Ground cinnamon

  16. 1/3 ts Ground allspice

  17. 1/3 ts Ground ginger

  18. 1 3/4 c Pumpkin puree

  19. 2/3 c Pecans, finely chopped

  20. 1 c Heavy cream

  21. 1 t Confectioners sugar

  22. 1/2 ts Vanilla extract

  23. Cream the butter and brown sugar together until light

  24. and fluffy. Add the eggs, one at a time, blending well

  25. after each addition. Sift the flour, baking powder,

  26. baking soda, salt, cinnamon, allspice, and ginger

  27. together twice. Add the sifted flour and spices to the

  28. egg mixture, then add the buttermilk and mix well. Add

  29. the pureed pumpkin and the chopped pecans and blend

  30. thoroughly, scraping the sides and bottom of the bowl

  31. to ensure proper mixing. Divide the batter equally

  32. between two buttered and floured layer-cake pans and bake in a preheated 350 degree oven for approximately

  33. 25 minutes, or until a tester inserted through the

  34. center comes out clean. Cool the layers for 10

  35. minutes. Remove them from the pans and place them in

  36. the refrigerator for 45 minutes, or until cold. Whip

  37. the cream, vanilla extract and confectioners sugar

  38. together until peaks form. Place first layer of cake

  39. on cake platter, cover with half of the whipped cream.

  40. Place other cake layer on top and finish frosting cake

  41. with remaining whipped cream.
