  2. 1 package Dry Yeast

  3. 1/4 cup Water

  4. 2 1/4 cups Warm water

  5. 6 tablespoon Olive oil --

  6. 6 cups Flour

  7. 1 teaspoon Salt

  1. Dissolve yeast in warm water (105F isperfect). Let it sit for two minutes.

  2. Add the rest of the ingedients and mixwell. Turn out onto board and kneadfor ten minutes. Place back in bowlcovered with a damp towel and let rise30 minutes. -- (30 to 40)

  3. Divide dough into 3 parts and place in 3 olive-oiled pie pans.

  4. Dimple dough with fingers. Place on top the following mixture:

  5. Coarse sea (or Kosher) salt, fresh ground pepper, chopped rosemaryand thyme. If herbs are dried, soak them in water for 10 minutes and thenpat dry on paper towels.

  6. Let rise 50 to 60 minutes.
