  2. Flaming Peaches with Custard

  7. 2 peaches -- halved, cooked

  8. 4 teaspoons brown sugar

  9. 4 sugar cubes --see note

  10. lemon extract OR rum -- ** see note

  11. -- Custard sauce: --

  12. 4 egg yolks

  13. 1/4 cup sugar

  14. 1/4 teaspoon salt

  15. 1 1/2 cups milk -- scald

  16. 1 teaspoon vanilla extract

  17. Use the hard sugar cubes.

  18. ** Use either the pure lemon extract or the rum.

  19. Soak the sugar cubes in a bit of lemon extract or in rum while preparing

  20. the sauce. Soak for 15-20 minutes.

  21. 2 whole eggs instead

  22. 1/4 cup sugar, salt and scalded milk

  23. heated until tiny bubbles form around edges, but do not allow to boil).

  24. Cook over simmering water, stirring constantly, until mixture coats

  25. spoon. Cool quickly. Blend in vanilla. Chill.

  26. To prepare peaches, place in baking dish cut side up and sprinkle brown

  27. sugar in hollows of peach halves. Dot with margarine. Broil slowly until sugar

  28. forms a crust.

  29. Place a soaked sugar cube in each peach half. Light cubes and bring to

  30. table flaming. Serve with the custard sauce that has been chilled.

  32. NOTES : Pears can be substituted for the peaches if you wish.
