  1. 1 dressed pullet, about Seasonings:

  2. 80g lard

  3. 2 1/2 g fine stock

  4. 3 tsp salt

  5. 1 tbsp sesame oil

  6. A dash of MSG

  1. Mix lard (60g) with salt, sesame oil and MSG to form a kind of gravy. Hold this mixture in a pottery basin.

  2. Clean pullet and put in fine stock or boiling water. Simmer until the chicken is done.

  3. Tear chicken into 3 separated parts: bone, skin and flesh (flesh should be shredded apart). Soak these parts in the basin of mixture thoroughly.

  4. When serve, place the bones at the bottom, the meat in the middle and the skin on top.

  5. Follow the main dish with 3 little saucers of salt fried ginger.
