  1. 1 (5 5/8 ounce) box garlic and herb couscous mix

  2. 3/4 cup chickpeas , rinsed

  3. 1 cucumber , diced & seeded

  4. 1 medium tomato , diced

  5. 1/2 cup feta cheese

  6. 1/2 cup sliced ripe olives

  7. 3 green onions , sliced

  8. 1/2 teaspoon garlic powder

  9. 1/2 teaspoon dried mint

  10. 1/2 teaspoon all purpose Greek seasoning

  11. 1 tablespoon lemon juice

  12. 1/2 cup Greek salad dressing

  1. Cook couscous according to package directions, except omit the butter amount. Let cool & then add all other ingredients. Allow to chill in refrigerator for a couple hours before serving.
