  1. 1 1/2 cups unbleached wheat flour

  2. 1 cup sugar or 1/2 cup sugar and 1/2 cup maple syrup powder

  3. 1/2 cup rolled oats

  4. 1/4 cup wheat germ

  5. 1 teaspoon baking powder

  6. 1 teaspoon baking soda

  7. 1/2 teaspoon cinnamon ground

  8. 1/2 teaspoon nutmeg ground

  9. 1 cup chopped walnuts

  10. 1 1/2 cups fresh cranberries

  11. 1 cup buttermilk or 1/4 cup buttermilk powder and 1 cup milk

  12. 2 eggs

  13. 1/4 cup vegetable oil

  14. 1 teaspoon vanilla extract

  15. 1/4 cup maple syrup granules

  1. Preheat oven to 350 degrees.

  2. Combine dry ingredients in a large bowl. Mix well. Gently stir in cranberries. In a separate bowl, combine the buttermilk, eggs, oil, and vanilla extract. Pour the wet ingredients into the dry and mix until just blended. Spoon into lined or oiled muffin tins, filling all the way to the top. Sprinkle with maple syrup granules, if desired.

  3. Bake about 25 minutes, or until inserted toothpick comes out clean.
