  1. Serve 4-6 Dough:

  2. 1/2 oz/15 g fresh yeast or 2 cups/500 ml warm milk

  3. 1 tsp sugar

  4. 1 1/3 cups/200 g all purpose/plain flour

  5. 1/4 tsp salt

  6. Filing:

  7. 8 oz/250 g mixed cheeses, such as Mozzarella, Provolone, and Fontina, cut into small cubes

  8. 2 tbsp all-purpose/plain flour

  9. 1 cup/250 ml milk

  10. freshly ground black pepper to taste

  11. 3 eggs, separated

  1. Method :

  2. Dough: Dissolve the yeast, milk, and sugar in a small bowl for 5 minutes, until foamy.

  3. Sift the flour and salt into a bowl. Mix in the yeast mixture to make a firm dough. Knead until elastic.

  4. Shape into a ball, place in an oiled bowl, and cover with a clean cloth. Let rise for 1 hour, or until doubled in bulk.

  5. Preheat the oven to 400°F/200°C/gas 6. Butter a baking dish.

  6. Roll the dough out on a lightly floured surface until large enough to cover the bottom and sides of the dish.

  7. Filling: Mix the cheeses, flour, and milk in a saucepan. Season with pepper and cook over low heat until melted.

  8. Beat in the egg yolks. Beat the egg whites in a large bowl until stiff.

  9. Fold the whites into the cheese filling. Pour into the dough base.

  10. Bake for 25-30 minutes, or until the filling is golden brown on top. Serve hot.
