  1. 2 lbs 908g / 32oz Yukon Gold potatoes

  2. 3 Hard-boiled eggs - finely chopped

  3. 1/2 cup 118ml Mayonnaise

  4. 1/2 cup 31g / 1.1oz Yellow onion - finely diced (medium)

  5. 2 Celery stalks - finely diced

  6. Kosher salt - to taste

  7. Freshly-ground black pepper - to taste

  8. Sugar - to taste

  1. Boil potatoes in skin and let cool. Slice into quarters. Add eggs, mayonnaise, onion, and celery and fold together. Season to taste with salt, pepper and sugar.
