  1. Orange Blossom-Strawberry Pie

  2. 6 cups strawberries

  3. 3/4 cup sugar

  4. 3 tablespoons cornstarch

  5. 1 teaspoon orange peel, grated

  6. 6 tablespoons water

  7. 2 tablespoons orange juice, frozen concentrate, thawed

  8. 9-inch pie crust

  9. Rinse strawberries and drainon paper towels; hull berries.

  10. In a 1 1/2 quart sauce pan, combine sugar, cornstarch and orange

  11. peel. In a blender, whirl 2 cups of the least perfect strawberries

  12. with water until smoothly pureed; pour puree into pan, mixing

  13. well. Cook, stirring often, over medium-high heat untilmixture

  14. comes to a full boil, about 5 minutes. Stir in orange juice

  15. concentrate to taste.

  16. Arrange remaining strawberries, tips up, in pastry shell; evenly

  17. spoon the hot cooked berry glaze mixture over the whole berries,

  18. covering completely. Chill until glaze is cool and set, at least

  19. one hour or, covered, up until the next day.
