  1. 3 tablespoon(s) extra-virgin olive oil

  2. 2 orange bell peppers , quartered, seeded

  3. 4 Cajun andouille chicken sausage links or other chicken sausage , fully cooked Flour and yellow cornmeal , for dusting

  4. 1 pound(s) frozen pizza dough , thawed, cut and shaped into 4 rounds

  5. 5 cup(s) pizza sauce

  6. 2 cup(s) (shredded) 4-cheese Mexican blend

  7. 1/4 cup(s) chopped parsley or cilantro

  1. Prepare a grill with a medium heat. Lightly brush the grill rack with oil.

  2. Lightly brush peppers and sausage with 1 tablespoon of the olive oil. Grill peppers 5 minutes per side, until tender. Grill sausages 5 minutes, turning frequently, until nicely marked and lightly charred. Remove peppers and sausages to a cutting board, cut peppers into thin strips and sausages into thin rounds.

  3. Generously dust work surface and hands with flour. Flatten and stretch each dough round into an irregular 7-inch round, keeping edges slightly thicker than centers. Transfer to a cornmeal-dusted baking sheet. Lightly brush top sides with 1 tablespoon of the olive oil.

  4. Grill pizza rounds, oiled-sides down, for 3 minutes, until marked, slightly puffy and golden. Lightly brush ungrilled tops of dough with remaining oil, turn crusts over on grill. Immediately spread 2 tablespoons pizza sauce over grilled side of each crust, then top with sausage, peppers, and 1/2 cup cheese on each. Cover grill, grill 2 minutes longer or until cheese is melted and bottom crusts are crisp and golden. Remove to plates with large spatula and sprinkle with parsley or cilantro.
