  1. 2 cups 125g / 4.4oz Cake flour - sifted

  2. 1 teaspoon 5ml Baking soda

  3. 1/3 cup 78ml Vegetable shorting - soften

  4. 1/4 cup 49g / 1.7oz Granulated sugar replacement

  5. 1 Egg

  6. 2 oz 56g Baking chocolate - melt

  7. 1/2 teaspoon 2 1/2ml Peppermint oil

  8. 2 teaspoons 10ml Vanilla extract

  9. 1/2 cup 118ml Unflavored milk

  10. 1/4 cup 59ml Skim milk

  1. Recipe Instructions Sift flour, baking soda and salt together. Cream shortening and sugar replacement until light and fluffy. Add egg and beat well. Add chocolate, peppermint oil and vanilla and blend thoroughly. Beat in yogurt. Add flour mixture and milk alternately in small amounts. Beat well after each addition. Pour batter into two well-greased 9-in. pans or one 9" X 13" pan. Bake at 350F for 30 to 40 minutes or until cake tests done.
