  1. Serve 6 1 large bunch fresh basil

  2. 1/2 cup/125 ml extra-virgin olive oil

  3. 8 oz/250 g mixed salad greens, well-washed

  4. juice of 1 lemon

  5. salt and freshly ground black pepper to taste

  6. 4 small rounds of goats cheese

  7. 4 slices firm-textured bread, toasted

  1. Method :

  2. Chop the basil in a food processor. Gradually pour in half the oil, pulsing until smooth.

  3. Transfer to a small bowl and let stand for 1 hour.

  4. Arrange the salad greens on individual servingplates. Drizzle with the lemon juice and remaining oil. Season with salt and pepper.

  5. Heat a grill pan over medium heat. Cook the cheese for 5 minutes until soft and warmed through.

  6. Arrange the cheese on top of the salad and serve with the toast. Drizzle with the basil dressing.
