  1. 175ml milk

  2. 2 teaspoons salt

  3. 80g breadcrumbs

  4. 4 tablespoons grated Parmesan cheese

  5. 1/4 teaspoon ground dried thyme

  6. 4 fillets haddock

  7. 50g butter, melted

  1. Preheat oven 260 C / Gas 10. In a small bowl, combine the milk and salt.

  2. In another bowl, mix together the breadcrumbs, Parmesan cheese and thyme.

  3. Dip haddock fillets in the milk, then press into the crumb mixture to coat.

  4. Place haddock in a glass baking dish and drizzle with melted butter.

  5. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.
