  8. 6 tb Cider vinegar

  9. 2 tb Dijon mustard

  10. 1 tb Low-sodium soy sauce

  11. 2 ts Honey

  12. 1/2 ts Celery seed

  13. 1/2 ts Caraway seed

  14. 1/4 ts Pepper -- black

  15. --SALAD--

  16. 2 c Green cabbage -- shredded

  17. 2 c Red cabbage -- shredded

  18. Carrot -- julienned

  19. Red pepper -- julienned

  20. Green pepper -- julienned

  21. Yellow pepper -- julieened

  22. 1/4 c Scallions -- finely chopped

  23. 1/4 c Fresh parsley -- minced

  24. --PER SERVING--

  25. 38 x *cals

  26. *gm protein

  27. 3/4 x *gm fat

  28. 6 x *gm carbo

  29. 130 x *mg sodium

  30. *gm fiber

  31. Dressing: Mix dressing ingredients together in a small jar. Set aside.

  32. Salad: Combine vegetables in a large bowl. Pour dressing over vegetables

  33. and toss to coat. Refrigerate at least 1 hour to blend flavors.

  34. Serves 8. Author's Note: Here's a tasty, mayonnaise-free version of a favorite
