  1. 1/4 cup white miso

  2. 1/4 cup mirin

  3. 1/4 cup sake

  4. 1/4 cup brown sugar

  5. 3 tablespoons rice vinegar

  6. 3 tablespoons soy sauce

  7. 1 (1-inch) piece ginger root, sliced

  8. 2 garlic cloves, minced

  1. In a medium sized bowl, combine all of the ingredients and stir to combine. Marinate the sole fillets in the mixture for approximately 1/2 hour. Heat a large saute pan over medium heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the sole fillets and cook the marinated sole for approximately 4 minutes per side, or until they are cooked through.
