  1. 2 cups (180g) rolled oats

  2. 1 cup (150g) plain flour

  3. 1 cup (160g) wholemeal flour

  4. 1 teaspoon baking powder

  5. 1 teaspoon bicarbonate of soda

  6. 1 teaspoon caster sugar

  7. 1 cup (140g) coarsely chopped dates

  8. cup (55g) coarsely chopped walnuts

  9. 1 3/4 cups (430ml) buttermilk

  10. butter , to serve

  1. Preheat oven to 190°C or 170°C fan. Grease a baking tray.

  2. Process oats until fine. Combine oats, flours, baking powder, bicarbonate of soda, sugar, dates, walnuts and 1 teaspoon salt in a large bowl. Stir in buttermilk until mixture forms a ball. Turn out onto a floured surface and knead into a 28cm loaf. Using a small knife, make five 1cm-deep slashes across top of loaf. Place on prepared tray. Bake for 1 hour.

  3. Wrap in a clean tea towel to cool, so bread remains moist. Cut into thick slices and serve with butter.
