  11. 1 1/2 cups 100% bran cereal

  12. 1 1/2 cups skim milk

  13. 1/3 cup margarine, melted

  14. 1 large egg

  15. 1 teaspoon vanilla extract

  16. 1 1/4 cups all-purpose flour

  17. 4 1/4 teaspoons Equal for Recipes or 14 packets Equal sweetener or 1/2 cup plus 4 teaspoons Equal Spoonful™

  18. 1 tablespoon baking powder

  19. 2 teaspoons ground cinnamon

  20. 1/2 teaspoons salt

  21. 1/2 cup pitted dates, chopped

  1. Combine cereal and milk in medium bowl; let stand 5 minutes.

  2. Stir in margarine, egg, and vanilla. Add combined flour, Equal, baking powder, cinnamon and salt stirring just until mixture is blended. Stir in dates.

  3. Spoon batter into greased muffin pans; bake in preheated 375°F (190°C) oven until muffins are browned and toothpicks inserted in centers come out clean, 20 to 25 minutes. Cool in pans on wire rack 5 minutes; remove from pans and cool on wire rack.
