  1. 4 eggs, lightly beaten

  2. 1 1/2 cups low-fat milk

  3. 1 cup fresh breadcrumbs

  4. 1 cup grated tasty cheese

  5. 100g lean ham, diced

  6. 3 spring onions, finely chopped

  7. 1 Tbsp Dijon mustard

  8. Salad, to serve

  1. Easy cheesy quiche Preheat oven to 200°C. Lightly grease a 24cm-diameter ovenproof pie dish. Combine all ingredients in a bowl. Season with pepper and pour into prepared dish. Bake for 30 minutes, until golden and set. Serve with salad.

  2. Cook's tip This delicious pastry-free quiche can be thrown together in minutes. The omission of pastry helps to keep the fat content down.
