  1. 6-6 in. corn tortillas

  2. 1/2 lb. hot pork sausage

  3. 1/4 cup onion , finely chopped

  4. 1 tbls. chili powder

  5. 1 tsp. cumin

  6. 3 eggs , beaten

  7. 1-4 1/2 oz. can chopped green chiles, divided

  8. 1 1/2 cups half and half salt and pepper to taste

  9. 1 1/2 cups monterey jack cheese , divided avocado Topping

  10. 1 avocado , chopped and mashed

  11. 1 tomato , peeled, seeded, and chopped

  12. 1 clove garlic, finely chopped

  13. 1-2 tbls. lime juice

How to make it Quiche Preheat oven to 350 Bring water 2 in. deep in skillet to boil and remove from heat Dip each tortilla in water to soften Drain on paper towels Put in greased 10 oz. custard cups In skillet, cook sausage, onion, chili powder and cumin until meat is brown and crumbly Drain fat and set aside In mixing bowl, add eggs, 1/2 of chiles, half and half, salt and pepper and combine Add sausage mixture and combine Spoon half of egg mixture into shells Sprinkle with half of cheese Pour rest of egg mixture over cheese Bake 20 minutes Sprinkle with remaining cheese and bake 5 minutes Remove from oven and let sit for 5 minutes Remove from cups and sprinkle with remaining chiles Avocado Topping In mixing bowl, mix all ingredients together Serve on side of quiche
