  1. 1 cup bulgur (cracked wheat)

  2. 2 cups boiling water

  3. 2 tablespoons olive or salad oil

  4. 3 cloves garlic, minced or pressed

  5. 1 pound ground turkey or chicken

  6. 2 cups thinly sliced carrots

  7. 2 small zucchini, ends trimmed, thinly sliced

  8. 1 tablespoon minced fresh ginger

  9. Cooking sauce

  10. 1/2 cup thinly sliced green onions

  1. In a bowl, mix together bulgur and boiling water; set aside until most of the liquid is absorbed, about 1 hour; drain.

  2. Place a wok or 10-inch frying pan over high heat.

  3. Add 2 tablespoons oil, garlic, and turkey; stir-fry until lightly browned, crumbling meat with spoon, about 5 minutes.

  4. Scoop out turkey and set aside.

  5. To pan, add carrots, zucchini, ginger, and 1/3 cup water; stir to free browned bits.

  6. Cover and cook vegetables until they are tender to bite, about 5 minutes; stir often.

  7. Boil, uncovered, until nearly all the liquid evaporates.

  8. Add turkey and sauce; stir until boiling.

  9. Spoon bulgur onto plates; top equally with turkey and sprinkle with green onions.
