  2. SPICY RED LENTILS AND RICE

  7. 6 scallions -- thinly sliced

  8. 3 cloves garlic -- thinly sliced

  9. 2 carrots -- peeled and sliced

  10. 8 ounces mushrooms -- quartered

  11. 1 cup rice

  12. 1 cup lentils -- dried, red

  13. 1 1/2 teaspoons salt

  14. 1 teaspoon coriander

  15. 1 teaspoon cumin

  16. 1 teaspoon ginger

  17. 1 teaspoon tumeric

  18. 4 cups water

  19. 8 ounces kale or spinach

  20. 1 cup nonfat yogurt

  21. Saute scallions and garlic for three minutes or until slightly

  22. softened. Add carrots and mushrooms and sautee, stirring occasionally for 5 minutes or until carrots are crisp - tender. Add the rice and lentils, salt, coriander, cumin, ginger and tumeric

  23. and stir to coat. Add the water and bring to boil over high heat. Adjust the heat so the mixture bubbles gently. Cover and cook for 15

  24. minutes. Stir in the kale. Cover and cook for 2 minutes or just until the
