  1. Grapefruit Cake

  2. 125 g butter

  3. 125 g sugar

  4. 2 eggs

  5. juice and finely grated zest of 1/2 grapefruit

  6. 180 g flour

  7. 1 tablespoon baking powder

  8. 2 tablespoons warm milk

  9. Cream the butter and sugar together until pale and creamy then add

  10. the eggs one at a time, beating well after each addition. Stir-in

  11. the juice and zest of the grapefruit then add the flour, baking

  12. powder and milk. Pour into a well-greased ring cake tin and place

  13. 150C. Bake for about 40 minutes until the

  14. cake is set.

  15. Take out of the oven, allow to cool slightly then remove from its

  16. tin and place on a wire rack. Decorate with icing made from icing

  17. sugar, butter and grapefruit juice and zest.
