  1. 1 salmon filet

  2. 1 package(s) cream cheese (8 oz.) , softened

  3. 1 package(s) frozen spinach , thawed and squeeze drained

  4. 1 cup(s) brown rice , cooked

  5. 1 package(s) crab , imatation works well

  6. 1 cup(s) red pepper , diced

  7. 1/4 cup(s) mayo

  8. 1 envelope(s) alfredo sauce mix , fix according to directions

  9. 1 package(s) monterary jack and cheddar cheese , grated

  1. In large bowl, mix the spinach, rice, crab, red pepper and MJ and Cheddar chesse till well combined. In smaller bowl, combine the cream cheese and mayo until it becomes a 'workable' consistency (like a brownie consistency) to mix into the spinach-crab mixture. Mix the two together in the large bowl and season to taste with your choice of seasonings. Place fillet on a foil lined cookie sheet. (helps in clean-up) Slice fillet down middle to butterfly it. Open it up. Fill the fillet with the spinach-crab mixture and close the fillet back up. Pinch the sides together to close it. Bake fillet in a 350 degree oven until done, and flakes easily with fork. Do not overcook. Place fillet on serving platter. Surround the fillet with brown rice and mixed vegtables (brocolli, cauliflower and carrots is a nice with this dish). Drissle with Alfredo sauce and serve the rest of the alfredo on the side.
