  1. 1 whole(s) English cucumber

  2. 1 bunch(es) radishes

  3. 1 bunch(es) scallions

  4. 1/4 cup(s) white wine, raspberry vinegar

  5. 1/3333333333333 cup(s) olive oil

  6. 1/2 cup(s) chopped fresh mint leaves

  7. pinch(es) sea salt & pepper to taste

  1. Peel cucumbers, and slice thin. Cut the radishes in thin slices. Slice scallions (white and lite green parts) on the diagonal, and toss the bowl with other items.

  2. Combine vinegar and oil. Taste for balance; the dressing should be tart. Toss the vegetables in the dressing.

  3. Just before serving, season with salt and pepper, and sprinkle with mint leaves. Toss again. Do not season the salad earlier, as the salt will draw moisture from the cucumber and make it watery.
