  1. 1 lb 454g / 16oz Crawfish tails

  2. Crawfish fat

  3. 1/4 lb 113g / 4oz Butter

  4. 1/2 tablespoon 7 1/2ml Flour

  5. 1 Onion - chopped fine

  6. 1 tablespoon 15ml Bell pepper - chopped fine

  7. 2 Garlic cloves - chopped fine

  8. Green onion tops - chopped

  9. Fine Salt - red and black pepper

  10. To taste

  1. Melt butter in skillet. Add flour and stir until blended.

  2. Add onion, bell pepper, and garlic and cook until tender. Add crawfish fat and cook about 15 minutes, stirring occasionally.

  3. Add crawfish tails, cover, and simmer about 20 minutes.

  4. Add seasonings, green onions, and parsley.

  5. Cook over low heat until seasonings blend. Serve over rice.
