  2. BAKED CHRISTMAS PUDDING WITH BRANDY SAUCE

  6. 1/4 c Butter or margarine,

  7. -softened

  8. 1/4 c Sugar

  9. 2 Eggs

  10. 3/4 c Molasses

  11. 1 1/2 c Finely chopped mixed candied

  12. -fruit

  13. 1/2 c Finely chopped yellow

  14. -candied pineapple

  15. 1/2 c Chopped pecans

  16. 1 1/2 c All-purpose flour, divided

  17. 1 1/2 ts Baking powder

  18. 3/4 ts Baking soda

  19. 1/2 ts Salt

  20. 1 t Ground cinnamon

  21. 1/2 ts Ground allspice

  22. 3/4 c Milk

  23. Brandy Sauce-separate recipe

  24. 10 To 12 sugar cubes

  25. Lemon extract (opt.)

  26. Combine butter and 1/4 C sugar in a large mixing bowl;

  27. beat with a wooden spoon until well blended. Add eggs

  28. and molasses, mixing well.

  29. Dredge candied fruits and pecans in 2 T flour; set

  30. aside.

  31. Combine remaining flour and next 5 ingredients; add to

  32. creamed mixture alternately with milk, beginning and ending with flour mixture. Stir fruit mixture into batter.

  33. Spoon batter into a greased and floured 2 quart ring

  34. 350 for 1 1/2 hours.

  35. Unmold onto serving platter. Spoon Brandy Sauce over

  36. pudding. If desired, soak sugar cubes in lemon

  37. extract. Arrange soaked sugar cubes evenly around

  38. heat-proof serving platter, and ignite just before

  39. serving. Di Note: Don't drink too much before flaming this one
