  2. TOMATO BUTTERNUT SOUP

  6. 1 md Butternut squash

  7. -- peeled and diced

  8. 2 c EDENSOY, Original

  9. 2 cn EDEN Diced Tomatoes

  10. -- (1 can ñ4 1/2 oz.)

  11. 1 t Salt, or to taste

  12. 1 tb Fresh ginger

  13. Place small pieces of squash in saucepan with EDENSOY,. Simmer until

  14. squash is soft. Add 1 can tomatoes, puree with squash. Add another can

  15. of diced tomatoes, leaving in chunks. Heat, add salt, ginger and serve.

  16. Garnish with croutons and green onions. Delicious and easy!

  17. Prep Time: 15 minutes

  18. Cooking Time: 30 minutes

  19. Yield: 5-6 servings
