  1. 2 carrots, coarsley chopped

  2. 2 stalks celery, coarsley chopped

  3. 1 small onion, chopped

  4. 1 Tbl butter

  5. 1/4 C. water

  6. Saute carrots, celery & onion with butter and water in a large stockpot. Meanwhile, mix together the following:

  7. 2 Qt water

  8. 2 tsp garlic powder

  9. 2 Tbl parsley

  10. 1 tsp black pepper

  11. 1/2 c. instant potatoes (you can add more if you like thicker soup, but let it cook for a while before you add more)

  12. 1 C. powdered non-dairy creamer (you can use milk instead of the water and skip the creamer if you prefer. I do that when I have extra milk that needs to be used)

  13. 1 Tbl chicken base

  14. broccoli flowerettes (as much or as little as you like.. I usually use about 2 heads of broccoli)

  15. 30 minutes, or until broccoli is soft. Stir in about 12 slices of american cheese (more if you like it extra cheesy, and I do!!!). Stir until melted and serve!

  16. This easily becomes Cheesy Potato by using potatoes instead of broccoli. And of course can be Creamy instead of Cheesy by leaving out the cheese.
