  1. Sweet Mango Chutney

  2. 2 tablespoons butter or ghee

  3. 1 small onion, minced

  4. 1 inch piece of ginger (about 2 teaspoons), peeled and grated

  5. 2 unripe mangoes, peeled and chopped

  6. 1/2 cup raisins

  7. 1 tablespoons brown sugar

  8. 1 tablespoon tamarind paste

  9. 1 teaspoon garam masala powder

  10. salt and pepper

  1. Heat the ghee in a skillet over medium heat. Add the onion and ginger and cook for 1 minute.

  2. Add the mango, raisins, sugar, tamarind paste, and curry powder.

  3. Reduce the heat to low, and cook until everything is soft and the flavors have blended, about 30 minutes. Season to taste with salt and pepper.

  4. Put the chutney into a bowl and allow it to cool before serving.
