  1. 12 kg spare ribs, cut into bite size pieces

  2. 5 1/2 tbsp oyster sauce

  3. 3 tbsp dark soy sauce

  4. 2 tbsp dry sherry

  5. 1 tbsp brown sugar

  6. 1/4 tsp five spice powder

  1. Combine well all ingredients except water in a big bowl and cover.

  2. Allow to marinate for 1 1/2 hours.

  3. Reserve sauce and transfer spare ribs on a rack in a roasting pan containing 580 ml water.

  4. Cook in oven at 180 degree C for half an hour.

  5. Turn ribs and coat occasionally with sauce.

  6. Cook for a further 25 minutes.

  7. Serve hot.
