  1. 3 egg yolks

  2. 1 1/4 c. canned pumpkin

  3. 1/2 c. milk

  4. 1/2 tsp. salt

  5. 1/2 tsp. ginger

  6. 1/2 tsp. cinnamon

  7. 1/2 tsp. nutmeg

  8. 1 tbsp. (1 env.) unflavored gelatin

  9. 1/4 c. cold water

  10. 3 stiffly beaten egg whites

  11. 1/2 c. sugar

  12. 1 9 baked pie shell

  1. Beat egg yolks and 1/2 cup sugar until thick. Add pumpkin, milk, salt and spices. Add gelatin which you have softened in cold water. Cook until thick, stirring constantly. Cool pumpkin mixture.

  2. Whip egg whites until stiff. Add remaining 1/2 cup sugar gradually. Fold into cooled pumpkin mixture. Pour into pie shell and chill. Top with sweetened whip cream or Cool Whip. To garnish, sprinkle with ground nuts.
