  5. 1 pt Gooseberries, stemmed

  6. Sugar

  7. 2 tb Water (to 3 tb)

  8. 1 c Heavy cream, whipped

  9. Put the gooseberries in a nonreactive saucepan with

  10. 1/4 cup of sugar and the water. Cook very gently until

  11. the gooseberies are thoroughly done and soft enough to

  12. mash. Put them through a sieve or food mill and add

  13. sugar to taste. Fold the gooseberry puree through the

  14. whipped cream. Chill for several hours.
