  1. 1 cup 62g / 2 1/5oz Flour

  2. 1/3 cup 65g / 2 1/3oz Sugar

  3. 1/4 cup 27g / 1oz Unsweetened cocoa powder

  4. 2 teaspoons 10ml Baking powder

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/2 cup 118ml 1% low-fat milk

  7. 1 cup 198g / 7oz Egg - lightly beaten (large)

  8. 2 tablespoons 30ml Canola oil

  9. 1 teaspoon 5ml Vanilla extract

  10. 3/4 cup 120g / 4 1/5oz Brown sugar

  11. 1 1/3 cups 315ml Coffee - hot and strong

  1. Recipe Instructions Preheat oven to 375F. In a large bowl stir together flour, sugar, cocoa, baking powder and salt. In measuring cup, combine milk, egg, oil and vanilla. Make a well in center of dry ingredients and gradually pour in milk mixture, stirring until combined. Spoon into a lightly oiled 8X8 baking dish. Spread evenly. Dissolve brown sugar in coffee and spoon carefully over batter. Bake for 25 minutes or until a toothpick inserted in center comes clean. Let stand for 10 minutes. Serve hot or warm.
