  1. Bundt pan or 22 cm baking pan

  3. 1 large navel orange - cut into segments including skin

  4. 2 bananas

  5. cup sugar

  7. 2 cups self raising flour

  8. 3 eggs

  9. 190 g butter - at room temperature

  10. 2 tablespoons of olive oil

  11. Ingredients 3

  12. cup walnuts

  13. 2 ripe bananas - extra - slice on a slant

  14. Olive oil spray - to oil bundt pan

  1. Preheat oven to 180C Grease bundt pan with olive oil spray- set aside In a food processor Process orange, bananas and sugar until finely chopped.

  2. Add Ingredients 2 and process until just combined Spread ½ of mixture evenly onto the greased bundt pan Layer ½ of sliced bananas and ½ of walnuts Top up with the remaining mixture Layer the remaining sliced bananas and walnuts on top of mixture Bake in a moderate oven 180C for about 45 minutes or until cooked when tested.

  3. Stand cake in bundt pan for 5 minutes before turning out onto a wire rack to cool.
