  5. 2/3 c Red lentils

  6. 4 tb Vegetable oil

  7. 4 md Green bell peppers

  8. 1 ts Cumin seeds

  9. 2 Onions, chopped

  10. 2 Green chilies

  11. 1 1 inch piece ginger, grated

  12. 1 tb Ground coriander

  13. 1 1/4 c Water

  14. Salt & pepper

  15. 2 tb Chopped cilantro

  16. Rinse lentils & soak for 30 minutes. Heat half oil in

  17. 3 to 5 minutes till

  18. golden brown. Drain & cool. Add remaining oil to

  19. pan. Cook cumin till they begin to pop. Add onions &

  20. chilies & cook for 8 minutes. Stir in ginger &

  21. coriander. Drain lentils & add to the pan with water.

  22. 15 to 20 minutes til lthe

  23. liquid has evaporated.

  24. Stir in salt & pepper. Add cilantro. Cut tops off

  25. peppers & remove seeds. Stuff with the lentils &

  26. replace the tops. Stand in a baking dish. Bake at

  27. 350F for 15 minutes. --
