  2. 1/4 pound jamon serrano -- cut 1/4" cubes

  3. 1/2 pound jamon york -- (baked ham), cut 1"

  5. 1 teaspoon ground cumin seed

  6. 2 hard-boiled eggs -- finely chopped

  7. 1/4 cup finely-chopped parsley

  8. 1 egg

  9. 2 ounces grated manchego

  10. 1/2 cup flour

  11. 1 cup extra-virgin olive oil

  1. Place jamon serrano, jamon York, paprika, cumin seed, hard-boiled eggs, parsley and egg in food processor and blend until smooth. Remove to mixing bowl, add Manchego and 3 tablespoons flour, stir well to combine. Roll into 1-inch ovals and roll into flour.

  2. Heat oil in an 8- to 10-inch frying pan until 375 degrees. Cook croquetas in oil until dark golden brown, 5 to 6 at a time. Drain on paper towels and serve warm.
