  1. 1/4 cup Dijon mustard (recommended: Edmond Fallot Taragon)

  2. 2 tablespoons apple cider vinegar

  3. 1/4 cup vegetable oil

  4. 1 tablespoon chopped fresh tarragon leaves

  5. 2 tablespoons honey

  6. 3 tablespoons sour cream

  7. 3 (6-ounce) cans albacore tuna

  8. 1/4 cup diced red onion

  9. 1/2 cup julienned jicama

  10. 1/2 cup golden raisins

  11. 1/2 cup shredded carrots

  12. 1/4 cup sunflower seeds

  13. Mustard Rolls, recipe follows

  14. Lettuce, for serving

  1. Thoroughly whisk together dressing ingredients in a large bowl. Add tuna to bowl and toss to coat with dressing. Fold in the remaining ingredients. Cover and refrigerate for 1 hour.

  2. Serve tuna salad on mustard rolls with lettuce.
