  1. 1 tablespoonbottled mango chutney

  2. 1/2 cupfinely chopped cooked turkey or chicken (about 3 ounces)

  3. 1/2 of a smallapple, chopped (1/3 cup)

  4. 2 tablespoonslow-fat mayonnaise dressing

  5. 1 tablespoonchopped fresh chives or sliced green onion

  6. 1/2 teaspoongrated fresh ginger or 1/8 teaspoon ground ginger

  7. 1/4 cupchopped macadamia nuts, cashews, or peanuts

  8. 24 1/4-inch-thick cucumber slices

  1. Directions Snip any large pieces of chutney. In a small bowl, combine chutney, turkey, apple, mayonnaise dressing, chives or green onion, and ginger. Cover and chill for 2 hours. Just before serving, stir in half of the nuts. To serve, spoon a scant tablespoon of the turkey mixture onto each cucumber slice. Sprinkle with remaining nuts.
