  1. 4 (6 oz. 1" thick) salmon fillets

  2. 1 Tbsp. extra virgin olive oil

  3. 2 tsp. chili powder

  4. 1/4 tsp. ground cumin

  5. 1/2 tsp. salt

  6. 1/8 tsp. white pepper

  1. Preheat oven to 450 degrees F. Place fillets on a heavy duty baking sheet or baking pan. Brush with olive oil and sprinkle with seasonings.

  2. Roast fish for 8-10 minutes, then turn off heat and let stand in unopened oven for 3-5 minutes longer. Serves 4
