  1. 8 large open mushrooms

  2. 3 spring onions, sliced

  3. 1 garlic clove, crushed

  4. 30ml/2 tbsp oyster sauce

  5. 5g/10 oz packet marinated tofu, diced

  6. 200g/7 oz can sweet corn, drained

  7. 10ml/2 tsp sesame oil

  8. salt and ground black pepper

  9. Serves 4

  1. Method :

  2. Preheat the oven to 200C/400F/Gas 6. Finely chop the mushrooms stalks and mix with the next three ingredients.

  3. Stir in the diced marinated tofu and sweet corn, season well, then spoon the filling into the mushrooms.

  4. Brush the edges of the mushrooms with the sesame oil. Arrange them in a baking dish and bake for 12-15 minutes, until the mushrooms are just tender, then serve at once.
