  1. 250g low fat ricotta

  2. 100g semi sun-dried tomatoes

  3. 1 red chilli

  4. 1/3 cup basil, torn

  5. 1 red capsicum, sliced

  6. 1/2 cup dried bread crumbs

  7. 1/4 cup grated parmesan cheese

  8. 4 large field mushrooms, stalks removed

  1. Preheat oven to 200C (or 180C fan forced).

  2. Mix together all the ingredients except for the mushrooms. Season.

  3. Stuff the filling into the mushrooms.

  4. Bake for 20-30 minutes and serve with salad.
