  1. 1 cup unsweetened pineapple juice

  2. 2/3 cup dry sherry

  3. 2 tablespoons light brown sugar

  4. 1/2 teaspoon dried rosemary leaves, crushed

  5. 1 clove garlic, minced

  6. 4 boneless pork loin chops, about 1 inch thick

  7. Salt and pepper to taste

  1. In a medium bowl, whisk together pineapple juice, sherry, brown sugar, rosemary and garlic. Place pork chops in a shallow dish, pour marinade over chops. Cover and refrigerate overnight, turning meat occasionally.

  2. Prepare outdoor grill, placing grill rack 5 inches from heat source. Remove pork chops from marinade; discard marinade and season chops with salt and pepper. Grill chops about 5 to 6 minutes per side or until cooked through.
