  1. 1/2 cup all-purpose flour

  2. 2 eggs, lightly beaten

  3. 1/4 cup dry bread crumbs

  4. 1/4 cup grated Parmesan cheese

  5. 4 boneless skinless chicken breast halves (6 ounces each )

  6. 1 tablespoon butter, melted

  7. 2 large tomatoes, seeded and chopped

  8. 3 tablespoons minced fresh basil

  9. 1 tablespoon olive oil

  10. 2 garlic cloves, minced

  11. 1/2 teaspoon salt

  12. 1/4 teaspoon pepper

  1. Place flour and eggs in separate shallow bowls. In a third bowl, combine bread crumbs and cheese. Dip chicken in flour, then eggs; coat with bread crumb mixture. Place in a greased 13-in. x 9-in. baking dish. Drizzle with butter. Bake, uncovered, at 375° for 25-30 minutes or until a meat thermometer reads 170°. In a small bowl, combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through. Yield: 4 servings.
