  2. SAN FRANCISCO BLACK BEAN & CORN STEW

  6. 1/4 c Dry sherry or apple juice

  7. 1 tb Olive oil

  8. 2 c Onions, chopped

  9. 1/2 c Celery, chopped

  10. 1/2 c Carrot, chopped

  11. 1/2 c Red bell pepper, chopped

  12. 4 c Black beans, cooked

  13. 2 c Corn kernels, fresh/frozen

  14. 2 c Stock or water

  15. 2 tb Garlic, minced

  16. 1 c Chopped tomatoes

  17. 2 ts Ground cumin

  18. 4 ts Chili powder or to taste

  19. 1/2 ts Oregano, dry

  20. 1/4 c Fresh cilantro, chopped

  21. 2 tb Honey

  22. 2 tb Tomato paste

  23. In a large stock pot over medium high heat, combine

  24. the sherry and oil. When hot, add onions. Saute,

  25. stirring, until soft but not brown. Add celery, carrot

  26. and bell pepper; saute 5 more minutes. Add remaining

  27. ingredients; bring to a boil. Lower heat and simmer

  28. for 15 minutes.

  29. Before serving, puree 1 cup of the stew in a blender;

  30. add back to the pot.

  31. Variation: Serve with crushed corn chips on top.
