  1. 1/2 small onion -- chopped

  2. 1/2 small green pepper -- chopped

  3. 1 tablespoon vegetable oil

  4. 8 ounces tomato sauce

  5. 1 4 ounces can sliced mushrooms -- undrained

  6. 1/8 teaspoon dried whole thyme Salt and pepper to taste

  7. 2 eggs

  8. 1 English muffin -- split & toasted

  1. Preparation : 1. Saute onion and green pepper in oil until tender; add tomato sauce, mushrooms, and seasonings. Cook over low heat until thoroughly heated.

  2. Break eggs, one at a time, into a custard cup. Hold the lip of the cup close to tomato sauce mixture, and gently slip egg into sauce. Cover and simmer over low heat 20 minutes or until eggs reach desired degree of doneness.

  3. Spoon eggs and sauce over English muffin halves.
