  1. 1 Organic (or other) salmon filet 1/2 c vegetable broth sugar free mustard (French's) Mustard seed Seasoned rice vinegar Lemon juice Spinach Lemon Juice garlic chips celery seed

  1. Preheat oven to 400. Use a case iron skillet if possible. Heat broth til bubbling. Coat salmon with mustard and mustard seed. Saute salmon in broth 3 mins/side. Sprinkle a tbsp. of vinegar and a squeeze of lemon juice in. Transfer to oven. Bake 15 - 20 mins, depending on whether you prefer salmon rare or medium etc. In a frying pan, bring a little water to boil. Add fresh spinach leaves (quite a lot, as it cooks down). Stir quickly, then remove from stove, drain off water, add lemon juice, garlic chips and celery seed. Serve salmon on top of (or beside) spinach.
