  1. Preheat oven to 350 Place chicken between two sheets of heavy-duty plastic wrap, and flatten to an even thickness using a meat mallet. Spread two tables of pesto sauce across each chicken breast. Roll up lengthwise, securing with a toothpick Place corn flakes crumbs in a shallow bowl. Dredge chicken into the crumbs and place in a baking dish coated with cooking spray. Bake, uncovered 35 minutes. Let stand 10 minutes. Remove toothpicks and slice into 1 inch pieces.
